Chickenfried Steakhouse Canadian Bacon

I chickenfried some canadian bacon for breakfast this morning...

It is some of my homemade cold smoked canadian bacon. It's the steakhouse/pepper bacon.

I sliced it fairly thick, dredged it in flour, dipped in an egg/milk wash and back into the flour.

Fried the bacon til golden...

Fried a couple of eggs...

Topped a toasted english muffin with the crispy chickenfried bacon...

Added a couple of eggs...

Then smothered in creamy gravy...

It was pretty tasty!

The chickenfried bacon was great, nice and crispy on the outside and tender on the inside. It would be great in a sandwich.
