Chicken, sausage and shrimp etouffee

Saw a few threads on etouffee and wanted to try it out. Started out with the ingredients.

Got a dutch oven hot on the grill and put a little oil in to brown the andouille sausage.

Got nice and brown and crunchy

Then added thighs to the sausage grease/oil and browned that on both sides.

Removed the chicken and started a roux. Left the grease and oil in pan, added butter and flour. This was the roux at the beginning.

Cooked until it has a nice color to it. Maybe 10mins.

Then added all the veggies to the roux and covered for a few minutes to sweat them down. Added a can of beer to deglaze the pan, then added the chicken stock, paprika, bay leaves, thyme, oregano, and a can of stewed tomatoes. Took that to a boil then added the chicken back in to simmer for an hour till it started to fall off the bone.

Took the chicken out and shredded it. Then through the shredded chicken, shrimp, and sausage back into the pot to cook shrimp.

Served with white rice and texas toast. Pretty good meal the dish was a little flat. Maybe need more salt next time or try more seasoning not sure.
 
Be sure not to perfect it. That way you can make it a lot ... as practice! Looks mighty fine!
 
Oh no you didn't! Anything that starts with a sausage and chicken grease roux is a winner in my book! I'll take an extra bowl of rice with it off camera...mmm!
 
Looks delicious, watch out though the lorax looks like he's ready to fight you for it!
 
Looks great, try a little cajun seasoning next time. Kick it up a notch! :)
