Testing for a charity cook

I was asked to do a charity cook for a high school auction night. The theme is "A night in Paris". Ummm... I cook BBQ - ok let me see what I can do. So my menu is a frisee salad with a smoked bacon vinaigrette, hickory smoked strip steak au poivre with a brandy sauce served with crispy smoked potatoes and a green veggie yet to be determined.

The plan is to trim out and smoke full slabs of NY strip to an IT of 120, cut into 4oz portions and flash them in some butter on the flat top for the finish.

Here are a couple of pics from the first test run... Pretty good stuff. :grin:

Mmm that looks good! I agree broccoli would be good or even brussel sprouts. They can be over cooked and still taste just as good.
