For those interested, I bought a sausage log from GFS ( Gordon Food Service) These things are large, but for me the pork was much better quality than the usual JD or BE at most stores. I made 3 fatties from one log. Also if you shop at Sam's club, mine has started to carry center cut ham steaks for a limited time. You get 4 for $18 to $20, these things are awesome for smoking. We've put the ham in pork-n-beans, scalloped potato's, quiche, sandwiches. Split pea next and 15 bean soup.
