Shrimp and Conecuh Stuffed Poblanos

Made these last week. I had some gulf shrimp from Texas that I wanted to use.
Decided to give stuffed poblanos a try.

Marinated the shrimp in Mojo Criollo for about 30 minutes...

blistered and peeled some poblanos..

fried up some Conecuh...

gave the shrimp a quick cook..

started the sauce... butter, onions, garlic.. cooked til tender, then flour, cream, cheese, salt, and Brethren Wicked Cajun's Pookie G Dayum seasoning..

added some of the sauce to the bottom of the pan first...

added the shrimp, Conecuh, and the drippings from the Conecuh skillet to the sauce..

Then stuffed the poblanos with the shrimp, Conecuh, sauce, cheese mixture..

into the drum, with a kiss of mesquite, til hot and bubbly...

It was creamy, gooey, spicy and had a nice hint of smoke. It was kinda tasty. :)

Thank you guys! I usually make rellenos but this was nice for a change.
 
WOW, that is looking crazy good. I love everything about this dish. However when I give it a go I am sure it will look like...( :tsk: ).....well you know what. Those flavors will (might) be there.

I dont' even know what to say to that besides I want some. Good Lord, I would have just been happy with the shrimp! :shocked: Really great stuff right there Jeanie!

Thanks Greg! :hug: :grin: I usually use anaheim peppers for "stuffing" but these poblanos were mighty fine. (and they hold more) I'm going to use them again for sure. :becky:

Does everyone in Oklahoma cook like you ? If so I can not live in that state for health reasons!!!! I would be HUGE!!!! You are killing me! Looks delish!
