Made these last week. I had some gulf shrimp from Texas that I wanted to use.
Decided to give stuffed poblanos a try.
Marinated the shrimp in Mojo Criollo for about 30 minutes...
blistered and peeled some poblanos..
fried up some Conecuh...
gave the shrimp a quick cook..
started the sauce... butter, onions, garlic.. cooked til tender, then flour, cream, cheese, salt, and Brethren Wicked Cajun's Pookie G Dayum seasoning..
added some of the sauce to the bottom of the pan first...
added the shrimp, Conecuh, and the drippings from the Conecuh skillet to the sauce..
Then stuffed the poblanos with the shrimp, Conecuh, sauce, cheese mixture..
into the drum, with a kiss of mesquite, til hot and bubbly...
It was creamy, gooey, spicy and had a nice hint of smoke. It was kinda tasty.
