Info on setting up a contest?

My mother organizes a large event in Meeker, CO. They are looking to bring more people into the event and grow it a little. I suggested a BBQ Contest as something to possibly look into. I have never set up a contest and don't know everything that goes into it. She thought it might be something possible but would like more information. If anyone in the area or otherwise would be willing to maybe answer some questions for her I'd greatly appreciate it. The event is the Meeker Classic, its a sheepdog trial, they already do a Lamb Cookoff which seems to be a success and have vendors as well. Thank you much.
