First cook on the 288 Gallon FatStack

First cook happened on the new smoker. 2 Pork Butts. They were amazing. Picture of them was 6 hours in. Started at 7am, wrapped at 3pm and pulled at 5pm. These are the two pack of boneless from costco. You can see the butcher’s twine in the picture. When I went to remove those to shred the pork, the string pulled right through. Pull temp was 204.

It was a huge hit with everyone I had over and the wife loved it. After years of trying to convince her that a pellet smoker (Traeger) has limitations and will never produce the flavor that on offset smoker with real oak will put out, she finally got to experience it in the home setting. (We went to Austin, Texas back in October to visit Franklin’s). All that being said, she is hooked and can’t wait for the brisket cook.

Looks awesome! Feel free to not respond, but would you mind stating what you paid for the smoker? My only reason for asking is that FatStack doesn't list prices on most (or all?) of their smokers, and I'm just one of those curious kinds of people. Again, if you're not comfortable with listing the price no worries.

I really hope that you'll document and post your brisket cook when you get around to it!
