Bacon Wrapped Shrimp?

How do you make sure the bacon is done and shrimp isn't overdone?
 
use prosciutto instead of bacon. some people will precook the bacon a bit before wrapping.
 
I was curious about pre-cooking. Seems to make a bit of sense.

Yep. Partially cook the bacon over moderate heat to render some of the fat without allowing the pieces to crisp. Don't use thick cut.

Cook hotter than normal too. That will crisp the bacon without overcooking the shrimp.

Rick's idea may be better in that bacon can overpower the delicate taste of shrimp.
 
i'll have to add that i've never actually tried it myself with shrimp. but i've done bacon wrapped scallops with no precooking the bacon and they were great. just put the bacon side down and the bacon shields the seafood from the direct heat, then flip to the other bacon side

(my shrimp are so good, they don't need no stinkin bacon! :biggrin: )
 
There is a little finesse to it, but i have placed the shrimp in the freezer for 20-30 minutes prior to cooking. And definitely don't use thick cut bacon.
 
Someone here, some months ago, suggested pre-cooking the bacon
on High for one minute in the wave.
I laughed, then tried it.
Makes all the difference in the world.

Freezer trick may be good trick too.

I did, just trying to work in a power tool for your amusement. :biggrin:

The minute thing did work well.
The Bacon becomes somewhat slimy &
slippery and is more difficult to work with but, it does work.

Microwave works great for precooking.
Ditto on Not using thick-cut bacon here.

True, the half cooked bacon is kinda slimy and hard to work with, but it beats having overcooked seafood.
