Looking for a copycat sausage recipe... Or something close

Some of yall might be familiar with Conecuh brand smoked sausage. Basically it's the best sausage in the world. At least it is in my world. Anyway, does anybody have a good smoked sausage recipe that might be close to Conecuh? I'd just like to try making some sausage and I figured I'd do the ol' go big or go home deal.

If it matters, I'm basically a homemade sausage newby. Thanks guys!

Never tried it... Sorry... But there are plenty of sausage recipes out there... Good luck

We eat conecuh sausage. It is not my favorite, really greasy. Does grill well though. I think it is just a cold smoked pork sausage in sheep casings. Hickory smoked. The spice mix would take some tweaking but I think it could be figured out. I make a lot of sausage, but I only cold smoke in the winter.
