Full Fledged Farker
We were fortunate along with our immediate family and did not get any water. With all the afternoon rain and then the flooding, it has taken a few weeks to be able to break the Shirley in but I finally found a dry day late last week.
My stepson was helping his stepsister gut her house out since it flooded, so we packed up the leftovers and sent them over for the group helping her out.
Got the chimney going (need to buy a weed burner):
Threw on a couple of splits:
Prepared a 13.5lb prime brisket and a 9.5lb pork butt:
A little Butt Rub on the pork:
SPOG on the brisket:
Fire and temp looking good:
On they go:
Still rolling along - had to damper - the Shirley definitely holds heat well:
Easy to maintain thin blue smoke:
Looking good:
Wrapped after the stall:
The finished butt:
The finished brisket:
Plated:
By far the best brisket I have cooked. Not sure if it is the new pit or more experience (probably a little of both). Now off to Amazon to order 6 foot probes. Thanks for looking.
