I am on the mailing list for Jeff Phillip's the Smoking Meat forum. Seen some interesting ideas from him, and last weeks piqued my curiosity. Like they do at competitions, Cup Cake Chicken Thighs. He made it look fairly easy. So, I grabbed some thighs and a couple large muffin tins. I plan on cooking them tomorrow, so I did my prep work tonight.

I started first by deboning the bone in, skin on thighs. It really wasn't as hard as I thought it would be, but I'd hate to do a lot more than the 10 I did.

Once I got them all deboned and skinned, I threw it all into a bowl with some olive oil and some HDD. We do like spicy.

Put all that into a Ziploc bag and into the fridge to marinate over night. See y'all tomorrow for the cook...
 
Cannot wait! I have a Myron Mixon Cupcake Chicken pan in my arsenal that I have yet to use. This will give me the inspiration to try it.
 
Have fun with the cook. I have done these twice following Myrons recipe. I like them bone in vs bonless because they are easier to hold. You can add some butter to the broth as well. Truly head turning when you present them.
 
Jeff Phillip's has some interesting things in his news letter.

i would like to see whats in his rub's and sauce's before paying for the recipes.
 
Oh that is gonna be good. HDD. is my new favorite rub for all things chicken.
 
Can't wait to see how they turn out. Prepped a silicone muffin pan, but haven't gotten around to using it yet.

Late night last night, so didn't get up until 1 pm. That was when I remembered that these take about 3 hours to cook. Rush to get the smoker started and the chicken into the pans.

First, had to drill the pans. Kinda hated doing it to brand new pans, but it had to happen.

Next, I pulled the chicken out on the marinade and gave them a nice role shape. Hmmm. Thought I had ten. BBQ Gods must have taken their share already.

Wrapped the skin around them. Had to find the right size skin for each piece.

And skin side down into the pans.

Put some chicken stock into the pan and onto the smoker at 2:15 for the next 1.5 hours...
 
Step one of the cooking process complete. Chicken flipped and more HDD added.

It says another 45 mins until time to sauce.
