Thanks Ron! Gotta say beef cooked in beer... Oh my!!! My mom cooks oxtails in beer all time and I figured a chuckie shouldn't be any different and I was right.

Thanks Norm!!

Prepared horseradish, mayo, coarse black pepper, dry mustard, a drop or two of lemon juice (I used lime since my lemon tree is on break now) and dried or fresh cilantro or parsley (optional). I happened to grab dried cilantro and that's what I used. All of the ingredients were added to taste.

My horseradish plants are mature enough that I can steal a couple of the roots off of them and use for this. Wow are they ever hot this year!
