Dino Ribs on BGE

Picked up with Dino Ribs at the local HEB grocery store. Took a real lazy approach to these and they turned out fantastic.

1. Trimmed... nothing
2. Rub with kosher salt and course ground pepper
3. Smoked on Large BGE, indirect set-up, 300F
4. Pull at 202F internal temp (about 5 hrs).
5. Rest for 45 mins under loose foil.
6. Eat

Smoke, Fat and salt... what could go wrong? Turned out better than expected.

Letting the meat flavor be the star of the show! (with s&p and smoke as the supporting cast) Works great more often than one would expect, looks great here.
 
Another salt and pepper, beef rib fan here. Looks great!
 
Unfortunately we have some left overs. Anyone try re-heating beef ribs with a sous vide? I think that's where i'm headed this weekend.
 
Awesome. Did you wrap these at all or cook them unwrapped the entire time? I really want to try these more, only done them once or twice. Your's look delicious.
