First a big Thank You to all who have served. This country would not be free save for your sacrifice.

The Wife picked up a Choice packer. I just finished Aaron Franklin's book and watched the first episode of his show on PBS so I was raring to go.

A 9 + pounder. :

Went with Aaron's salt & pepper rub trying to get it even like he shows. Temp probe in thickest part of flat for reference only:

I don't have a stick burner but it fit well in the 18 WSM. Using oak chunks for smoke. The Party Q has been keeping the temp dead on 275*F:

The Wife likes to make aus ju so after bark forms and it hits the stall I plan to put it on a rack in a pan covered in foil until probe tender.

Well, had a tornado blow through very close. Had to shut it down. Finished the brisket and letting it rest. Will slice some tomorrow afternoon. Hope to have more pic's.
