Dig that cast iron flat. Thanks for the info on the flathead too. Looks like a good catch all the way round.
 
In my part of the world, that style of cooking is called "Pittsburgh Rare" or "Black-and-Blue." According to local lore, the steel workers would bring steaks and cook them for a few seconds on top of the blast furnaces.

Ok that sounds like it happened. I have seen similar by the blokes driving our steam loco's years ago.

In capable hands, glowing coals and beef will never steer you wrong - especially if you involve cast iron!
