Thanks to those that helped with the questions I had... I took the loin cut it in half and sprinkled it with garlic salt,pepper and Old Bay...Then fired up the drum to around 325 with a couple small pieces of oak for smoke..pulled it at 150 after about 1hr 45 minutes...Tasted awesome..Best loin I have had so far..I think the left over will make some kick butt Chili Verde..

It might smell like Dinty Moore stew, just ask Divemaster and Billy.
