The pork...


The setup...
Inverted vortex with lump plied all around the outside...Chunks of cherry for the smoke...
A foil pan blocks the center to direct airflow to the outside...
And a few lit coals on opposite sides of the V...


The pork...Trimmed, tied, and seasoned...On top of the V ready for indirect cooking...


Temp ran a bit higher than I was hoping for...


And this is the result...


Pork in for a rest and a pan of garlic parmesan taters takes it's place over the V...


When the spuds are done I lose the V and shove all the coals to one side to roast the asparagus...



And plated with some mushroom gravy made with the pork drippings...

oh man that is a whole bunch of good stuff. I think I have only had one crown roast before, my MIL made it and it was delicious. I think about how good it was sometimes. But I think yours and the sides would blow hers away. Looks really good.
 
Parmesan garlic potatoes

This is my wife's recipe and she makes it better than I do...But she has the ability to follow a recipe...I don't...

2 lb. russets thin sliced
XX c. grated Parmesan
1.5 c. heavy cream
1 sprig fresh thyme (dried will work fine)
2 cloves garlic chopped
1/2 t. nutmeg
black pepper

Heat the cream with thyme, garlic, and nutmeg
Layer potato slices overlapping a bit
Pepper potatoes. cover with cream and parm shreds
Repeat layers till all taters are used...
Bake uncovered 45 min @ 375 till top is browned.

Try this...It's VERY good...
