pepper stout beef on the kettle. 1 or 2 pans?

thinking of doing a pepper stout beef on the kettle.
so................i'll start out with a pan under the cooking grate to catch the drippings. would you use the same pan later for the onions and peppers
and pour off some of the drippings before wrapping in that pan ( sounds right ) ? use same pan and use ALL the drippings ? use a separate pan ?

I must have always done this on my wsm before......because I can't remember dealing with this issue.
 
I always just used one pan without catching the drippings after it has smoked for a bit.
 
I use one pan. I do NOT collect the drippings while smoking. Veggies and beer in pan, roast on top. More than enough juices there when the meat is done.
