Never got around to doing them yesterday. So, did em today.
![]() ![]() Insane in the membrane removed ![]() Light seasoning of onion and garlic powder and "Cajun spice". ![]() Charcoal ring ~half full of KBB and BIG chunk o' cherry jet-started w/ HF propane torch ![]() Temp ranged from 220-275. Midway through cook, I strapped on my guitar, lost my mind, temp dropped to 205 in the 4th hour. Charcoal was mostly spent, so foiled to retain heat (windchill ~18*), jet-started some lump, pulled off the top and midsections and dumped that in, and let em finish at 270 for another hour. Slopped on a bit of Bulls Eye, and they were done via bend test. ![]() ![]() Nice smoke ring. Excellent "chewy" texture, and tasty! ![]() ![]()
