Plowboy Smoked Chicken Salad

Found some whole wheat thin buns with less carbs and no high fructose corn syrup and thought "OK I really need to eat healthier" so I bought them and decided on some homemade chicken salad for lunch at work this week... smoked/grilled some boneless, skinless chicken breast rubbed in Plowboy Yardbird Rub. Cubed the breast and tossed with diced onion (wish I had red onion) and celery. Added some salt and cracked black pepper and mixed it all with Miracle Whip Lite. Haven't tasted it yet as I'm letting it get cold first but it looks pretty good.

A few cooked elbow macaroni noodles would be awesome as well.

Partly I suppose.

Although it wasn't that I ate/drank a lot of bad stuff. More that I stepped on the scale this morning and I've gained back 10 of the 15 pounds I'd lost last spring.

That's what Costco is doing with all that leftover rotisserie Chicken! Imagine what it would taste with Plowboys in it!
