Making a grilled zucchini lasagna. Sliced zucchini into planks around 1/8 inch. Salted and racked to pull out as much water as possible. Let that sit for a couple hours.

Now on to a Bolognese sauce. Chopped up carrots, celery, onion and garlic in the food processor.

Then sauté in olive oil at medium high heat

Once all the liquid is cooked out, add 1lbs of ground pork and 2 lbs of grass fed ground beef. Sautéed until liquids are cooked out and meat is slightly caramelized.

I believe this is a first in Throwdown history - two entry cooks occurring at the same time!

Thirdeye: there is a good reason for that. Almost too much. Plus I am cooking a pot of chili at the same time.

The sauce. Liquid and fat cooked out so added some tomato paste and cooked down some more. Once there was a good amount of fond on the pan deglazed with a cup of red wine. Added some half and half, enough water to get the level right and adjusted seasoning with more sea salt.

On to the Kamado at 325 for 4 hours or so. Disregard the grill shot. Too much wine, but you get the gist either way. Sauce is on

Plan is to finish sauce, cool then assemble tomorrow to finish lasagna.

Zucchini planks are off the grill and cooking. Main goal was to cook out more water so the lasagna wouldn’t be so wet

Sauce is gone far enough. Will chill in the fridge overnight and will be ready in the morning. Goodnight now

Up and moving. Time to assemble the lasagna. Not truly a lasagna Bolognese but more of an Americanized version. That being I am doing a ricotta layer instead of bechemel.

Start with a layer of Bolognese ragu. Then a layer of grilled zucchini. A layer of herbed ricotta. Layer of mozzarella then another layer of Bolognese. Then start over. Set in the fridge until ready to cook. Plan is to have ready for lunch.

Onto the Rec Tec set to 350. Going to cook for an hour or so. Will add more cheese and finish in oven broiler
 
Foil covered and cooked for about an hour and a half. Removed, put more cheese on top and put in broiler to finish. Going to let sit for at least 30 minutes before cutting into it

Okay, done sliced and plated. It is a really nice dish. Very rich thanks to the Bolognese sauce and ricotta. Generally lasagna noodles don’t bring too much to the party but the grilled zucchini planks really contribute flavor and match very well. A winner.
