My work has asked me to do an event for them.

What would you charge if each person got: 1 pulled pork sandwich, a can of soda, and a small bag of chips? (that's what they want)

for 100 people?
for 200 people?
for 300 people?

I don't mean to hijack this thread, but how many 8 lb. pork butts would it take to feed 100 people?
 
What is their budget? They may have a $10 p/p budget and if so you can add something else. I just hate to do anything for under $10 since it takes so much time for pulled pork as a caterer. Restaurants can do this because they have their smoker going all the time so the time is not really an issue for them. For a caterer, you are giving up a day cooking for such a small gig.
 
I think $7 person is fare and should net you a nice profit. Just some quick figuring, 50#butt @ 1.5 is $75, buns $20, sauce $10, cans of pop $40 and individual bags of chips $50(35-50 depending on bag size) that's $175 food cost for a $700 job. I'd take one of those any day. No I know you have fuel cost, rub, ect...but that might be another $30+-.
 
I'd do that for $7, I think I could make a little profit at that price..

I think for 100 people, I could do the whole thing for about $400.00 my cost...

75-100$ for 5 butts
25-30$ worth of bread & sauce
50-100$ for canned soda
50-100$ for chips
50-75$ for dish and napikins..
+ your time and i figure out at 10.00 @ 15 hrs=$150.00

the profit could be as much as $300.00 or more depending on what you serve on....
