Smoked Chicken Salad

Not much into a salad for a meal but this does make it mucho mo palatable if’n you know what I mean. After this week, and I know chicken is getting pretty old hat rat about now, but a lot more chicken is going to be cooked around our little shack in days to come. My next big chicken cook will be mostly breast for making this here salad, but we’ll also throw in some thighs, wings, and legs for the day of the cook or the fridge.

That looks great! I actually order a smoked chicken salad at my local BBQ joint (KT's) about 1 out of 4 visits. He makes a smoked vegetable vinigarette, not sure what's in it, but I've been meaning to try somethign like it. It definately includes onions and smoked cherry tomatoes.
